			<content:encoded><![CDATA[<p>If you enjoyed reading the benefits of green tea in our earlier blog then you will really enjoy our tea of the day &#8211; Gunpowder Green &#8211; a traditional, earthy green tea from China. The leaves are had rolled tightly and unfurl to release all their flavour during brewing. Named by the English in China for their distinct similarities to gunpowder pellets (with a nice subtle smoky flavour).</p>

<ul>
<li>Green tea contributes to a healthy heart &#8211; it has been shown to inhibit the production of platelets that cause the blood to thicken and clump into clots</li>
<li>Scientists have determined that green tea can reduce blood pressure</li>
<li>A study on Japanese green tea drinkers found that those who drank more than 5 cups a day cut by half there risk of stroke.</li>
<li>The Japanese have used green tea to treat viral influenza and the common cold.</li>
<li>Green tea has been shown to fight bacteria that causes tooth cavities and tartar. A study has reported that green tea also slows the growth of the bacteria that contribute to bad breath.</li>
<li>Green tea is full of anti-oxidants and great as a healer and a preventive.</li>

<p>This Saturday saw the <a href="http://brewsandbubbles.googlepages.com/home" target="_blank">Brews and Bubbles </a>debut at Kirribilli Markets in Sydney. Held once a month on the fourth Saturday in the shadow of the iconic Sydney Harbour Bridge it was a beautiful day with loads of quality stalls and friendly customers.</p>
<p>And next weekend (3rd May) sees the Palm Beach market again &#8211; hope to see you there. Only two markets until  Mother&#8217;s Day &#8211; make sure you get mum some relaxing tea or soap before the 10th May.</p>

<p>Brews and Bubbles would like to introduce&#8230;..Spicy Chai!</p>
<p>Chai is not the name of a type of tea – rather it is the traditional style in India of brewing tea with spices and milk. The <a href="http://brewsandbubbles.googlepages.com/blackteas" target="_blank">spicy chai </a>on our <a href="http://brewsandbubbles.googlepages.com/teamenu" target="_blank">tea menu </a>is unique as it can be enjoyed as a normal tea – there’s no need to add anything – but if you like a traditional milky Chai then try the following recipe&#8230;.</p>
<p>4 teaspoons spicy chai tea</p>
<p>2 cups boiling water</p>
<p>1 cup milk</p>
<p>Honey to taste</p>
<p>Place the spicy chai mix in a saucepan in the boiling water and steep for 5 mins. Add the milk and heat until near boiling – then strain out the tea leaves. Serve with honey to taste. You can vary the amount of milk and water used depending on personal taste. If you like a stronger brew then add two teaspoons of English or Irish Breakfast tea to the first stage of brewing. Why not try frothing the mixture up before drinking with a whisk for a creamier brew&#8230;and a sprinkle of cinnamon on top finishes it off nicely!</p>

			<content:encoded><![CDATA[<p>With summer almost over it&#8217;s time to make the most of the hot afternoons with a refreshing iced tea. There is no great secret to making a great iced tea and you can have a healthy, thirst quenchinng alternative to sugar filled soft drinks in no time.</p>
<p>The best iced teas are made from any kind of fruit infusion for example <a href="http://brewsandbubbles.googlepages.com/fruitinfusions" target="_blank">Turkish Apple Tea</a>, <a href="http://brewsandbubbles.googlepages.com/fruitinfusions" target="_blank">Pina Colada </a>or <a href="http://brewsandbubbles.googlepages.com/fruitinfusions">Tropical Burst</a>, all available from Brews and Bubbles. These types of tea are full of natural goodness and vitamin C from the fruit and have a natural sweetness to them. As they do not contain any tea leaves you can brew them for a long time without the risk of the tea becoming bitter &#8211; such as with black tea or green tea bases. Use double the amount of tea that you would for a hot brew &#8211; about two teaspoons per person. I like to leave the brew infusing for about half an hour to really get all the flavours out, then give it a good stir and strain into a jug to put into the fridge. If you don&#8217;t want to wait this long then you can simply make the brew like normal (brewing for just a few minutes) then add loads of ice to chill down.  Another great thing about fruit teas is that you can reuse the leaves 3 or 4 times before discarding them (never store overnight though).</p>
<p>There are also some great iced black and green teas &#8211; again they have a fruity influence such as <a href="http://brewsandbubbles.googlepages.com/blackteas">Summer Sun </a>or <a href="http://brewsandbubbles.googlepages.com/greentea">Momoko</a> - check out the Brews and Bubbles web page for more info. Be careful with these though &#8211; as if they are brewed for too long then they will have a very bitter, overstewed taste. Simply make the tea double the normal strength but brew for the same amount of time (up to three minutes maximum). Then simply strain and chill &#8211; or if you would like instant iced tea just add loads of ice.</p>
<p>Iced tea is just like punch and can be garnished with anything that you choose - I like lemon and lime wedges, sprigs of mint or rosemary and orange slices &#8211; but this is up to your personal taste and imagination!</p>
<p>Another great thing to spice up your water, soft drink or cocktail &#8211; iced tea cubes. Brew the iced tea of your choice and pour into ice cube trays and freeze. You will then have access to beautifully flavoured ice tea cubes on demand. Try mixing things up &#8211; why not add a tropical iced tea cube to a chilled <a href="http://brewsandbubbles.googlepages.com/fruitinfusions">Turkish Apple</a>? Delicious! Or impress your guests by adding a strawberry or kiwi slice to the ice cubes before freezing down and then add to your party cocktails.</p>
<p>If you do prefer a sweeter iced tea then just add some raw brown sugar in the brewing stage.</p>
